Vegetable Washing Technology

The working principle is simple but effective. An air pump creates continuous fine bubbles inside the water tank. These bubbles make the materials roll and separate gently in water. During this process, surface dust, άμυλο, light impurities, and small floating residues are removed from the product surface. Floating debris can flow out through the overflow outlet, while heavier sand and particles settle at the bottom and are discharged through the drain.

For fried food factories, bubble washing helps reduce mechanical damage and keeps product appearance stable. It also lowers the impurity load entering the fryer, helping extend oil service life and reduce cleaning downtime. Typical bubble washer capacities can range from 500 kg/h to 2,000 kg/h. Small and medium models are often used for specialty fries, seafood snacks, and prepared vegetables, while longer machines can serve continuous frozen French fries or industrial fried snack lines.

The vortex washer creates strong circulating water flow inside the cleaning tank. Cut vegetables keep rolling in the water, so mud, άμυλο, small fragments, and floating impurities can leave the cutting surface more efficiently. Bubble assistance can lift light impurities to the water surface, while the following vibrating draining section removes surface water.

This technology is valuable in fried food production because surface moisture control is critical. After vortex washing and vibrating draining, less water is carried into the fryer. This helps reduce oil splashing, keep oil temperature more stable, shorten frying fluctuation, and reduce oil deterioration. A common vortex washing machine may reach about 1,500 kg/h, with a compact structure that integrates washing, impurity removal, and dewatering.

The roller brush washer uses multiple rotating brush rollers and water spray pipes. As the material moves forward on the rollers, the brushes create controlled friction on the surface. Mud, άμμος, old skin, and surface residues are loosened and washed away by spray water. By adjusting roller speed and brush hardness, factories can control the cleaning strength.

Light brushing can retain more skin for rustic-style fried products. Medium brushing is suitable for most French fries and potato chips. Stronger brushing can remove more skin when the factory needs a cleaner surface and more uniform frying color. Cleaner and smoother raw materials support better cutting quality, more even dehydration, and more consistent final appearance.

Roller brush washing machines are often selected by factories producing frozen French fries, potato chips, fried root vegetable snacks, and central kitchen semi-finished products. Depending on roller length, capacity may range from about 700 kg/h to 2,000 kg/h.

High-pressure spray washing is used when the material surface has stubborn soil, cracks, uneven skin, or residues that cannot be removed by soaking alone. The system uses high-impact water jets from multiple angles to wash the surface quickly and deeply.

In fried food preparation, high-pressure spray washing can be placed after rough washing or before the final frying preparation stage. It helps remove remaining mud, άμυλο, oil residues, and fine debris. Cleaner raw materials reduce black residue in the fryer, keep the oil surface cleaner, and help maintain more stable fried food color.

For industrial production, nozzle angle, water pressure, and flow rate should match the line capacity. A typical high-pressure spray washer may process around 1,000–2,000 kg/h, depending on machine length, pump power, and washing structure.
